Barbeque Chicken Pizza, Yes Please!

So, a few nights ago (ok this is a stretch, its been a few weeks), I made Pioneer Woman's (PW) Barbeque Chicken Pizza, and it was Ah-mazing.


I made some shortcuts to PW's fabulous recipe, and used store-bought pizza dough, a rotisserie chicken, and Guy Fieri's Kansas City-style BBQ sauce (which was deLISH):


BBQ Chicken Pizza:
Store Bought Pizza Dough
Rotisserie Chicken
BBQ sauce
1/2 Red Onion
Cilantro
Hot Cherry Peppers (for your hubby)
Sliced Provolone Cheese

1. Oil pan & stretch out pizza dough to fit your pan (This may seem impossible, but I trusted PW, and it CAN be done.) Drizzle more EVOO on pizza and a little salt.
2. Mix BBQ sauce into pulled rotisserie chicken meat.
3. Spread BBQ sauce onto pizza dough.
4. Cover in provolone cheese slices (I used almost a whole pack).
5. Add chicken, red onion slices, and red cherry peppers for your husband who only likes to eat spicy things.
6. Bake at 375 for 15-20 minutes until cooked throughout.
7. Take it out of the oven, drool over the tasty smell, and add chopped cilantro to the top.


My McWonderful husband even gave it his seal of approval.

Goodbye Pie!

One of our dear coworkers is leaving us today to go on to bigger and better things. Cake Balls were requested, but they did not seem fitting for the occasion. We needed something gentler, and lighter and a tad sweeter since goodbye's are so sad. And then it came to me...Goodbye Pie!

Why don't we make pies to send people off? To tell them, you are a sweet person in our lives, just like this pie...


So I did it. I made a pie. A Goodbye Pie!


I used Pioneer Woman's Raspberry Cream Pie recipe, mostly because I love her, but also because I love the thought of raspberry and chocolate holding hands and doing a little happy dance in your mouth. (Which it did!)

3 reasons to love this pie:

1-The crust is made of Oreo's....need I say more?
2-It uses REAL raspberries, and counts as a fruit serving for the day!

3-It elicited the perfect response that a Goodbye Pie should, it made her smile and be joyful, and also made her request to keep the entire pie for herself.

So sayonara to just saying plain ol' Goodbye with tears and the usual moping about. From now on, there will always be GOODBYE PIE.

Let there be Cake!


So I am having a hankerin' for Pioneer Woman's Italian Cream cake! My coworker is making it, after a much successful tasting of it a few weeks ago when I brought it into the office, and I can't stop thinking about it's coconutty, walnutty, creamy cheesy goodness!! I am not a baker, and I was able to whip this cake up and let me tell you--it's worth every calorie it probably includes!
